Prime Rib Recipe
This works for any size roast any kind. You do all the fancy stuff to it like rolling or covering it in rock salt,special herbs,ect ect if you want or just put it in, or on a roasting pan. This is the part that is hard to understand how it works but it does.
1 Put it in oven preheated to 375. Cook for 1 hour and turn off oven, and do not open the oven ever.(The roast must be in for at least 2 hours and up to 5 this way with the oven off) 2 One hour before you want to eat turn oven back on at 300 for 45 minutes. Then take out of oven and let it rest for 15 minutes before carving and it will be perfectly medium rare no matter what size roast you have. I have done 20+ prime ribs this way from 2 pounders up to a 26 pound monster. 3 If you have someone that does not like a perfectly done prime rib just put their piece into the micro for a minute to get rid of the pink for them. Dont try to put the whole thing in longer as it screws it up. My mom found this recipe from a cookbook I think named Colorado Cashe or something like that. It works everytime.
We do a Christmas Day brunch Italian Sausage, Ham, Home made Cinnamon rolls, fruits, eggs bacon, potatoes breads and so on, I cook a prime rib roast for Christmas Eve dinner.
Prime Rib Christmas Eve - Pork Roast Christmas Day - The morning starts with fresh cinnamon buns, Bloody Marys and coffee followed by Hot apple Cider, a light lunch, a nap, Eggnog and then dinner.
Frogmore Stew. Yeah the name sounds gross but if you like seafood boils then this is the shiznit. I like the traditional stuff but we just had that on Thanksgiving and since Christmas is at my house this year I get to choose what we are having.
A Fillet Mignon roast.
Lightly salt and pepper it with a little garlic,, then 325 deg F for about 80 min.
Baked potatos, Kings Hawaiian rolls, Underwoods sweet corn.
Au jus sauce of Consume,' butter and a little red wine heat to almost boiling.
This is what I grew up eating on Xmas. My dad did not like sharing his Yorkshire Pudding. I am glad he did, it's good stuff.
3/4 cup all-purpose flour
1/2 teaspoon salt
3 eggs
3/4 cup milk
1/2 cup pan drippings from roast prime rib of beef
Preheat the oven to 450 degrees F.
Sift together the flour and salt in a bowl. In another bowl, beat together the eggs and milk until light and foamy. Stir in the dry ingredients just until incorporated. Pour the drippings into a 9-inch pie pan, cast iron skillet, or square baking dish. Put the pan in oven and get the drippings smoking hot. Carefully take the pan out of the oven and pour in the batter. Put the pan back in oven and cook until puffed and dry, 15 to 20 minutes.
