    Where are you located.

don't be so fast to blame the carbs for your RPM. Idle and stumble is one thing. But if you think that 2 850 carbs are holding you back 500+ rpm, I doubt it. RPM is a HP deal. If you don't have the power to haul the gearing and prop, along with the weight and wetted area of your boat, all the carb work in the world won't help.

There is a limit to the gear and prop in a given boat that the engine can handle.

I use a holley catlog and a Quick fuel catolog and from that compare stock settings and parts. More than likley somebody before you herkey jerkeyed your carbs to the point there at now. It might be as simple as just replacing damaged or wrong parts and get them back to stock. Years back I sent a pair of VS 600 to Biggs performance . Just dont know if theyre still around.

    Yeah he is still around.

They may actually be a little more receptive to working on a customers carb as opposed to selling a complete carb. There has been some less than stellar feed back on Bigs, and I never heard a bad word about Prosystems.
But I think either is more than capable of handing a "tune to build" given enough info.
