I have "0" info on that boat. But with that said. I hope you don't plan on breaking any speed records.
This is what I would do.
Make sure it runs, then make sure it runs good. Make sure the jet pump is in good condition. Steering is in working condition. Get it sea worthy. And have fun. Could be a fun boat to restore.
I think it would look good with a windshield, engine cover, some nice seats, a swim step.

Dare to be different, if it turns out great you can claim you planned it that way.

Poke around on the wood and see if it's still good. I started with a project boat and nearly all the wood was rotted. I cut a small hole in the transom and the wood looked like peat moss inside. Couldn't tell from the outside.

Looking at the shape of the hull, I think this would be a good candidate to simulate an old mahogany Chris Craft type. You could wrap with wood type of vinyl or some guys can paint wood grain.
I thought it would be cool to put a jet drive in an old classic wood boat. This hull design and motor package could probably pull it off pretty nicely.
