I like working with biax and epoxy just because I'm used to it. It's also extremely strong/stiff and you will need less total layers. In my Sanger build I used 1708 (w/mat sewed in) on the flat areas (2 layers) and 1700 (no mat) where I had to bend it over stringers (1 tab and then 1 wrap). I tried to get close to the original glass thickness that I took off.
In my opinion Epoxy is the only way to go ................. using 1700 Biaxial w/no mat ( csm ) which should fit the bill for every phase of your project .
Eric , quick note / mention you do not want to use any fabric with CSM / chop strand mat such as 1708 with Epoxy resins because these mats have a binder / glue designed for Polyester Resins and though they are sometimes used with epoxy resins with satisfactory results , the binder may cause clouding and prevent thorough wet out .
