Looking to do a rebuild. My cousin is a very good mechanic who has offered to do it for me...or is this one of those things best left to the professionals...and if so...who?

A carb rebuild is pretty straight forward. Take it apart, clean it, put it back together. On the other hand, tuning requires a bit of understanding operating principals to achieve optimum results.

X2 What kind of carb is it? You may want to ask here for tips or check youtube for examples. It can at least get you over the fear of tearing into a carb.

It is a couple of holley 850's. They were previously set up to run on a similar twin turbo as mine, but I would like to possibly have the choke horns milled off and get a good tune in them.

Without knowing anything about their current state and any modifications, I'd recommend you send them out to someone familiar with draw through carburetor setups for the best results. But your cousin should be able to rebuild them as is, no problem.
