The probe type are cleaner and don't fall off. Easier to replace, and usually cheaper. BUT!!! Don't fall into the trap of thinking a water heater or some cheapie element is fine. You'll end up with a burnt out coked up POS in no time. They get too hot for heating still oil in a pan.
My Stef's pan(Thanks Steelcomp) has a screw in element, 8" cord with standard plug, does not contact the oil, heats up nice(Stef's installed it in my aluminum pan), you can buy the same element in Jegs for 65.99 part # 861 - 6771 (for steel pan), just bore a hole in pan add weld nut and screw in.
