All you have to do is video your GPS and graph the update time as compared to the speed reading.
I have done this many times and IMO it's foolproof.
My Gaffrig / Nordskog GPS is 1 sec update time.

You can also buy a unit that graphs it for you and measures out distances to whatever you want.

The cost of this unit will be less than running at a track twice.

Mathematically (Calculus) the 2nd derivative of a series of #'s such as speeds @ time intervals is the rate of change or, acceleration or deceleration ..... there are Excel Applets that have been written to approximate both the 1st (Minima & Maxima or points of change) & 2nd derivatives that can be found on the internet.
